Batch size: 8.0 l
60 min mash @ 67C
30 min boil (suggest 60 min if you can)
OG: 1.051
FG: 1.013
Bitterness (IBU): 30.0
Color (SRM): 33.0
ABV: 5.0%
Grain/Sugars:
72% Gladfield Ale Malt
13% Brown Malt
9% Medium Crystal 40L
6.5% Light Chocolate 400L
(Tim Wood in the comments suggested swapping out 3% of the medium crystal for a darker crystal and 2% of the brown malt for shepherds delight, which I think are worth trying to increase the sweetness and fruit cake characters, closer to the commercial Version. Thanks Tim)
Hops:
Fuggles (AA 4.6%, Pellet) to target 30 IBU
(I added 50gms at 12 mins, but you'll need to use you a brewing calculator or software to calculate how much you'll need for a larger batch size)
Yeast/Misc:
Whirfloc Irish Moss @ 10 mins
S04 yeast
Ferment at 18C, rising to 21C for the last few days for a diaceytl rest.
