Brown Rice:
Brown Rice is specially served with Dhansak. The combination of Dhansak and Brown Rice is gourmet’s delight.
My late mother used to cook in old brass metal pot (Tapeli). It has a sentimental value for me. So I will cook Brown Rice in this Tapeli.

Ingredients:
Basmati rice. 1.5 cups
Onions. 2 small
Fried onion (BIRISTA) for garnishing
Ghee. (Clarified butter). 2 table spoon
Sugar. 2 Tspoon
Salt to taste
Cloves. 3-4
Cinnamon. 1”
Black peppers. 5-6
Method:
1. Wash and clean and Soak 1.5 cups of basmati rice for 30 minutes in water.
2. Heat 2 Tablespoonful of ghee (clarifiedbutter) in a Tapeli (mettle pot).
3. Add cloves, cinnamon and black peppers and add chopped onions .
4. Sauté for 5 minutes and add 2 Tspoon of sugar.
5. After 3-4 minutes the onion will be golden brown and sugar will be caramelised .
6. Add handful of rice and mix well. This will give good colour to rice.
7. Add remaining rice and mix carefully so that rice grain doesn’t break.
8. Add 3 cups of water.
9. When boils cover and cook for 10 minutes or rice is done.
10. Our Brown Rice is ready to be served with Dhansak.
11. Garnish with fried onion (BIRISTA).
