ОтветитьPRO TIP! From someone who has experimented with egg bites for a long time, here are some things I have discovered:
Use a Cookie Sheet with Water: Place the muffin tin on a cookie sheet and fill the bottom with about 1/2" of water. This helps the egg bites cook more evenly, prevents them from puffing up during baking, and—most importantly—stops them from shrinking when they cool. It also reduces mess and ensures they release effortlessly from the muffin tin with no residue. This method is a huge improvement over cooking them directly on the rack.
Sauté Vegetables First: If you have a bit of time, sauté any vegetables in the oil of your choice (olive, avocado, etc.). This enhances the flavor and, more importantly, cooks out some of the moisture. This will help avoid a mushy interior in the egg bites, which can be caused by excess water.
Distribute Veggies Evenly: Drop your sautéed veggies into each muffin hole before pouring in the egg mixture. As the mixture cooks, the bubbles and air pockets in the eggs will cause the veggies to rise, helping them distribute more evenly inside the egg bite.
Use a Watering Can for Easy Pouring: Put your egg mixture into an open-top watering can for easy, mess-free pouring. The IKEA PS 2002 watering can is perfect for this, and it’s made of polypropylene, so it’s food-safe.
