Guys, as a Mexican all I can say is i cannot know all the regional dishes across country, but I can assure one thing, almost anything could be a delicious food for us, from animals to vegetables, to plants, to sea food, insects, etc, you can find almost free oil or fat meals, just veggie, just poultry or meat, mix of them, I believe the magic becames from a precise and intrincate receipe refined by hundreds or thousand of years. Even dicovering new mixes like a hotdog winnie inside a tortilla topped with Oaxaca cheese and hot sauce, we enjoy a lot eating, you are welcome anytime you want, tacos and burritos are just and entertainment for us, the real deal are traditional dishes, guisados as we know, soups, and of course desserts.

Burritos were sold in north mexico before were sold in united states. They are different tho, but the size of handmade flour tortilla is the size of the entire arm from shoulder to wrist that's why is called sobaquera or armpit tortilla. Now people referm to them as sonorean burritos.

Thank you America and the world for loving our food! There was a restaurant next door to him that showed him the way of the hard shell taco. It’s still open, its called Mitla cafe. The owner showed him the secret and never tried to sue him or do any I would dare say American business capitalist way. He just kept his family owned business afloat and still is!

Please don’t think Taco Bell or chipotle is Mexican food. We call it Americanized Mexican food. Come to California LA county. Have some real Mexican food. WAY different.

Burritos have always existed in Mexico, at least in the north. South Mexicans don't eat flour tortilla, however, in the north (west at least) we barely eat tortillas de maiz, we eat tortillas de harina in a daily basis.

There is a kind of flour tortilla from Sonora which is called tortilla sobaquera, burritos were first made here with those tortillas. These type of tortillas is pretty old, way before they started being popular in the rest of the north of Mexico or south of the US.

The very first Mexican food I ever ate was tacos my grandma made in 1975, of which she obtained the recipe from a roadside woman by observing her making tacos in Mexico. Her shells were flat and cooked in a cast iron skillet, one by one, then covered in a basket with a towel.The meat seasoned with ingredients she observed, with lettuce,onion, tomato, cheese and her own prepared salsa. It was delicious! There were no Mexican restaurants in Ohio at that time. She also said, she'd never do it again, since it involved much work :)

For spanish lesson about plurals, when you have a consonant on the end of the word, you add "es" instead of "s".
Tamales is the plural of tamal, not of tamale. Its so confusing because depluralazing is inusual and both interpretations are logical but only one is good.

I’ll share something with you concerning Mexican food

My first taste of Mexican food was in the 1960s. Yes, I’m not old.
Real Mexican food I found the flavors just intense, not just the jalapeños or the peppers that were spicy but human cinnamon cacao basically chocolate And a host of other natural flavors that I’d never tasted before
And this was in front of the place called Tippy taco House. They did it right
This is why a lot of Americans and Canadians like Mexican food they often times haven’t had this type of seasoning put in the food. I also come from a Chinese background so I’ve used to this kind of season things another ways

I’ve been to Mexico and the fruits and vegetables are just on another level of fresh and nutritious. Eating a freshly ripen avocado was like diving into cream
