Chicken Sheet Pan Fajitas

Spaghetti Squash with Roasted Tomatoes and Turkey Meatballs
Spaghetti Squash-
1 large spaghetti squash
olive oil
salt & pepper
Directions: Cut the squash in half and scoop out the seeds. Rub a good amount of olive oil, salt and pepper to the inside. Turn the squash face down on a sheet pan. Bake @400F for 30 minutes. Let cool slightly before "shredding" into spaghetti using two forks.
Roasted Tomatoes-
1.5lbs Cherry Tomatoes
Salt & Pepper to Taste
Garlic powder to Taste
Olive Oil to Taste
Directions: Coat tomatoes with a generous amount of olive oil, salt & pepper, and garlic powder. Place in an oven safe dish. Bake on the top rack of the oven @400F for 15 minutes.
Turkey Meatballs-
Ingredients:
1.5lbs ground turkey
1 egg
1/2 cup almond flour
1 tbsp crushed garlic
2 teaspoons oregano
1 tbsp Olive oil
Salt & Pepper to taste
Directions: Mix all the ingredients together in a large bowl. Line a sheet pan with foil and spray with olive oil. Using a cookie scoop, scoop out 13 meatballs and shape using your hands. Bake @400F for 20 minutes then flip and bake an additional 10 minutes.

Shrimp Stir Fry
Ingredients:
1lb peeled and deveined shrimp
5oz shredded carrots
1 small bag of sugar snap peas
1 small bag of angelhair coleslaw
Sauce:
1/4 cup coconut aminos
2tbsp honey
1 tbsp seasame oil
1 tsp siracha
2tsp cornstarch
Directions: Heat pan over medium high heat and add some olive oil. Cook the shrimp for about 1 minute. Add the carrots, peas, and coleslaw and cook an additional 4 minutes with the lid on. Add in the sauce mixture. Cook on low heat until thickened, about 4 minutes.
Serve over rice.
