Ingredients :

- Whole Wheat Flour - 2 cups (240g)
- Collagen or Protein Powder – 2 scoop (optional)
- Baking powder – 2 tsp
- Salt – ½ tsp
- Sweetener of choice – 1 Cup
- Oil – ½ Cup
- Eggs – 2 (room temp)
- Vanilla Paste – 1 Tsp or Vanilla Extract – 2 Tsp
- Milk – ¾ Cup
- Blueberries – 200 grams (approx)

Method:
- Preheat over to 400°F or 200°C.
- In a mixing bowl, sift whole wheat flour, collagen/protein powder, fine sugar, salt and baking powder. Mix and keep aside.
- In another bowl, crack 2 eggs, oil, vanilla extract or vanilla paste, milk and beat well.
- Combine dry and wet ingredients, do not over mx
- In a small bowl, combine the blueberries with about a tablespoon of flour and toss to combine. (This will help prevent them from sinking in the batter).
- Add blueberries to batter and mix.
- Transfer the batter to muffin tin.
- Bake for about 20 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before removing them.
