May 2020 - I went foraging for Wild Leeks (Ramps) and Fiddleheads in the woods behind my home and made a delicious Maple-Soy Glazed Salmon served over a bed of sautéd Wild Leeks, Fiddleheads, Peppers and Portobello Mushrooms cooked in cast iron over a bed of hot coals from a campfire. Here's the recipe, give it a try!
FIDDLEHEADS & WILD LEEKS SAUTÉ
INGREDIENTS
4 oz fiddleheads
4 – 6 oz bunch ramps
red pepper
yellow pepper
mushrooms
cloves of garlic
3 tbsp olive oil
salt, pepper, and Italian herbs to season
INSTRUCTIONS
1. Clean & trim the fiddleheads – leaving 1 – 2 inches of the stem.
2. Steam or boil the fiddleheads for approximately 10 minutes until tender crisp.
3. Clean & trim the root tips off the ramps and gently pat them dry with a paper towel.
4. Cut the red & yellow peppers into cube size chunks.
5. Slice the mushrooms.
6. Heat 2 tbsp of olive oil in a cast iron pan over the hot coals from the fire and add mushrooms. When slightly browned, add the wild leeks, peppers, garlic, salt, pepper, parsley and Italian herbs to taste. Cook for 5 minutes. Remove from the pan & set aside.
MAPLE-SOY GLAZED SALMON
INGREDIENTS
Maple-Soy Glaze:
¼ cup (60 mL) soy sauce
2 Tbsp (30 mL) maple syrup
2 Tbsp (30 mL) cilantro, chopped
2 Tbsp (30 mL) sweet chili
Salmon:
2 portions salmon
¼ cup (60 mL) Maple-Soy Glaze
1 tomato, minced with seeds and pulp removed
2 Tbsp (30 mL) olive oil
INSTRUCTIONS
Maple-Soy Glaze
1. In a small bowl, mix all ingredients together.
Salmon
1. Preheat cast iron pan over hot coals from the fire with olive oil.
2. Marinate the salmon in the glaze for 10 minutes. Remove salmon from marinade and place in cast iron pan.
3. Cook salmon over the hot coals from the fire for approx.6-8 minutes (when salmon begins to flake but still has a little translucency in the middle it is done).
4. Remove salmon from the pan and allow to rest for 3-4 minutes.
