Why thin a knife? #sharpening

Why won’t you just hollow grind them they last longer and the edge Is 10x thinner but the edge can chip easily

What are your thoughts on AUS10 steel not 8 but 10 lol I can’t find a lot of information on them but it’s amazing for me! Thank you for your time ✌️

How does that work with knives that have a flat side and a beveled side? Do those cut unevenly?
