I did the same with just half the amount of what you did, and I've got the same result, although I cooked it in the ninja foodi. Put that aside but if you look carefully in the inside, the root inside doesn't look like the one in a normal bread which has more bigger bubbles of air, yours and mine all look like the one in the normal cake. Believe me if you knead more on the dough before doing the second proofing it will change the root texture. Chill! 🥰🥰🥰
