ОтветитьNice to see someone who knows how to fillet & more Importantly make use of all usable parts. My personal favorite with BC are the "tips" or the collar meat, smoked or BBQ'd. Not unusual here In S.E Alaska to see a group of folks around a tote full of BC heads peeling out the tips for homepack. I haven't looked at all your video's as of yet Reed, but besides halibut cheeks being highly sought, Ling cod cheeks are wonderful also, and can be quit large depending on the size of the fish, of coarse. I appreciate your efforts greatly Reed and will seek out more of your videos. I make my living commercial fishing for salmon In S.E. Alaska and have much respect for the resource available to us. The two biggest Issues I have against the use of our resource Is: 1) How poorly the fish are cared for when caught and 2) How reckless and wasteful they are processed and utilized.

ОтветитьThis is my favorite fish to eat. Man the first time I had Alaskan Black cod, I was just blown away how buttery delicious it is.

ОтветитьThis isn’t a true cod though. It’s called a sablefish or black cod but isn’t really a cod. It is extremely expensive on the west coast though. It’s extremely good and I think it’s the best fish to smoke.

ОтветитьHow come you don't use the tongue and jaws of the cod? Here in Newfoundland fried tongue and cheeks and lower jaws are the best cuts! As is the sound bone with the swim bladder attached! Waste not!

ОтветитьI think you messed up the first side and had your knife angled wrongly over the ribs. You left a load of meat on the ribs so the first filet was smaller than the second one which was done better.

Here we call it blue cod (not the same as blue eye cod) as they have a blue hue
Black cod tastes like very good talapia, just fattier. No flavor. It's just a popular flex. Screw Nobu.

ОтветитьDon’t get me wrong, I really enjoy watching these videos even though the only 'fileting' I do is when I cut a piece of a fish stick with my fork. I’m wondering if there’s a piece of seafood out there he doesn’t think is “absolutely delicious”.

ОтветитьIn the mid to late 1980s I use to catch those- many of them- in the puget sound at the south end of vashon island at about 150 feet down- bottom around 180. We would also catch Hake but we would throw them bach as they were basically gut bags with thin soft meat- black cods have thicker denser meat by far- they are really fatty so it may be a aquired taste for some

ОтветитьI usually buy fish as fillets to cook but black cod is one that I have fillet from a whole fish… once. It was sold live in large tanks at an Asian fish market. I did such a terrible job and my fillets were puny because of it. Thank goodness, none of the fish was wasted because my mom loves Hong Kong-style steamed fish and cook all my poorly cut pieces along wjth all the bones to the steamer. 😂 Now I want to try filleting another after watching this video.

Me and two other guys and I went out with a Berinoff outfitter guide.
I mentioned the salmon. He gruffed, "Salmon are trash fish, we have something better out there."
We anchored in 300' of water and subsequently murdered the fish. We caught and keep about 25-30 Sable-fish, aka Black Cod, aka Butterfish.
He said you guys hit the jackpot!
