After my last Japanese-style blueberry bagels(ブルーベリーベーグル) video, many viewers requested a blueberry-free version. So, I’ve created this simple bagel recipe and added Yudane for extra fluffiness and chewiness. These bagels are perfect for toasting and making delicious sandwiches. Try them with butter or cream cheese! As an optional twist, you can add cheese on top of the bagel before baking—it adds a delightful cheese flavour.
Making Yudane:
Bread Flour 16g
Boiled Water 16g
Water 220ml
Caster Sugar 20g
Instant Yeast 4g
Bread Flour 400g
Salt 8g
All Yudane
For boil:
2 Tbsps malt extract or honey
2 Ltrs of water
Baking time:
Preheat the oven to 230°C
Bake at 210°C for 15 to 18 mins or
until golden brown
(As ovens vary, you may need to adjust the temperature for your own oven)
