When getting a religion, I'd say don't use one of your first two beliefs on the worship building, because you won't be building those for a long while anyway, so it won't give any sort of benefit in the short term. If anything, I'd say pick the worship building last, because you still need to invest production/faith to start getting returns. As for 'missing out' on your preferred worship building? Well, it may suck a bit to not get the ideal one for your strategy, but in most games at least one of the generally useful ones (Pagoda for Diplo favor, Stupa for Amenities, Meeting House for Production, or Wat for Science) will be available to grab later.

Also on the hilly maps I like to get 2 scouts and promote them with hill movement and march them across the poles. You can pick up lots of goody hut bonuses as the AI does not explore the poles much.

I usually go for early war on most civs. Is it not as good for ethiopia? I found when I went early war, I got my religion and faith generation delayed but also lots of AI cities arent settled in hills.
