ОтветитьI’ve been buying Einkorn berries from Jovial in 10lbs boxes and it’s $3.30/lbs.
I love the flavor and versatility. I mix lots of grains in my breads. I also found a local source for spelt and it’s less expensive than wheat, so I use lots of spelt.

ОтветитьMy dear lady I love you and your show. But you are missing the point. Grains raise your glucose just like sugar. That causes glycation and inflammation in your body which ultimately will shorten your life. This is proven. I can send you the data that proves this. And 1 more point, due you really want to be eating white grain or flour that has been bleached with chemicals? You should be aiming to cut out the foods with chemicals!!

ОтветитьAmerica's test kitchen has a wonderful "How can it be gluten free" cookbook. They use some of these Ancient grains in order to make gluten free bread and other items.

I buy other things from that brand and love them. ty ty I can only buy teeny tiny prepackaged freekah here it is a smoked wheat. very tasty if you like things with a smoky flavor. off to amazon to find this.

Ответитьthank you for your great presentation ,i have always wanted the truth about these grains/ not grains,in the 60s iwould go to the local mill and buy whole wheat for my bread. the miller called this "first break " and no one had ever bought this before but ithink he baged up more for sale in future. funny isnt it. always felt giltry haha

ОтветитьI made Einkorn bread last year. It was an experience working with a horrendously sticky sticky dough. I haven't made Einkorn since. Not because of its stickiness, not because it was difficult. The flavor was nothing special. It was a very interesting process. Einkorn is special however, because thousands, if not millions, cannot eat bread. But Einkorn is a highly digestible flour, allowing non bread eaters to enjoy bread again. If anyone cannot eat bread.... Try Einkorn, you'll be surprised.

ОтветитьWe began using einkron a few years ago, as our daughter has gluten sensitivity. The underneath of her eyes get red and baggy, she becomes achy and bloated, and has mood swings when she consumes gluten normally, but not when she consumes einkorn. I listened to a nutritionist who remarked the wheat grown today has 70x the gluten content of the wheat grown in our grandparents' day, because of the breeding, like you said. People love the fluffy texture... but our bodies were not created to process that much gluten. Einkorn is more expensive, but the expense is worth mitigating the cost of our daughter ailing.

So many of the channels I come across use fear tactics to food-shame people who chose to buy GMO and non-organic products, and label those food items as evil when they have no scientific evidence for their claims. There are a LOT of people who cannot afford to buy these expensive products and are made to feel less-than because of that. Thank you so much for presenting information that is not biased or judgmental, and based on science.

After watching many of your videos I trust your research. Thank you for helping me clear things up in my mind. I do not feel guilty anymore about using "modern" grains.I already use some of the ancient grains such as barley and millet because I like the textures and flavors and have been for many years before they were trendy.

Once in a while I buy my kamut bread which I pay six times more expensive than a normal baguette because I just love the taste of it. It's a pleasure. When I asked my baker about it, they put sugar and honey and oil in that bread. Finally nothing to do with the supposedly miraculous grain. Thank you so much for all the knowledge you share. ОтветитьFantastic Info Pam~ My favorite Grain is Spelt. I have a few other variety's but Spelt is at the top of my list to Keep a good supply of. I also use Red and White. Red , less as I have numerous health issues and it seems the more Red I use I have more issues with. Enjoying your valuable information! Thank you!
ОтветитьJust watched this video today. I love your informative videos and trying to catch up on some of your past ones. You asked about what grains we are interested in and I wanted to to mention Einkorn. In bulk I have found it as low as $2.99 / pound. I divide large bags into smaller portions, vacuum seal bags and then store in my cool dark storage pantry. The reason I would love to see more on this grain is that I heard that the gluten is supposed to be slightly different than gluten in modern wheat. Along with not being so inflammatory, some people who cannot tolerate gluten can still eat Einkorn. Thanks for all your wonderful videos!

ОтветитьI think the difference between you all and our family is we do not have the privilege of variety. We are limited in what we can eat because of our dietary and health issues.
In America we have a lot of issues with diabetes, leaky gut, and many other health conditions associated with eating high glycemic and highly processed foods. I think overall if people adopted their diet to eat millet and teff ( especially cold with vinegar as a salad ) and steered farther away from the higher glycemic and processed grains our health would improve as a nation.
please use eincorn in recipes.

ОтветитьWe have bought all our grains from Azure. The price of all their grains are very reasonable and an added benefit is that they are all organic. Yes they did charge us $40 for shipping but I am happy to pay this since we are now eating healthy food and we also save money on Ezekiel bread which we used to pay over $7 a loaf.
Yes all whole grains are healthy. However after some research I think rye is somewhat healthier. Unfortunately we have not been able to make rye bread since we have not had much luck making sour dough starter which will give this bread the wonderful sour taste. Also fermented food seems to be beneficial. I have noticed an amazing improvement in my digestive system since we have started to eat Kefir. I no longer suffer from UTI . When I visited Czechoslovakia I fell in love with rye bread. It was filling, and tasted great. One slice of this bread was a meal.
All cereals at the grocery store should be avoided and that includes oatmeal. Oatmeal used to be fed to horses in the Winter to fatten them. Most of us do not need any extra weight. To increase the shelf life they remove parts of the grain. Whole grain digests slower so it is easier on the body. Eva

ОтветитьI bake my bread every week, so I experiment different recipes with different flours. For me the ancient grains (Emmer, Khorasan, Spelt; I never used Einkorn) are much more tasty than the wheat flour bread. In Germany, where I live rye is nothing special; almost all breads contains a certain amount of rye flour, and many of them over 50% rye flour. The baking properties of these grains are much pour then of the wheat, so to make a dough of the quality of a wheat flour dough is very difficult. But then you can use a loaf pen and bake a very tasty not open crumb bread. Regarding the price: for my weekly 1kg bread I use around 700g of flour, so if I pay a much higher price for the ancient grain flour, this will not break my bank.
ОтветитьSome of these ancient grains are still used in chicken feed. We can buy a small bag of bird seed/chicken feed and spread the grains to grow. I just bought some einkorn to plant for them. I did this in one of my pastures to grow grains for my yard chickens to forage. The only drawback has been that the chickens stopped going back to the coop at night, now they roost in a tree in the yard.
