The juice probably would ferment if left more than a week? Do you have any info or references on how long vegetable waste should ferment before using it as fertilizer?

I bought a small screw juicer that I used on different cover crops about 10 years ago. The difference in the extracts from the different cover crops was quite striking - the juice from buckwheat was very different from the rest. I did some analysis of Brix, but it never went anywhere. I finally turned the juicer back to WSU surplus. I never thought of using it on a large scale. Very interesting idea. I wonder what the glucosinolate-isothiocyanate effect of the mustard juice was on the soil?

Eric, if the residues are removed, does that reduce the soil-building benefit of growing the cover crop in the first place?

Isn't this what korean farmers do? I think they leave the juice ferment. Which I think would happen que quickly in California anyway. What's your view on the fermentation of the juice and nutrient bioavalability? Koreans seem to think that it makes them more so.
