For science, approximately what temperature is the curd after about 7 minutes and bubbles appear? Is that the same 160F as other recipes?

I have always trusted your baking expertise so I naturally go to you first when I want a specific recipe. I just don’t like “live” videos as I hate interruptions from the task at hand. My question is: can you grate the skins of lemons, oranges, etc. ahead of time and do they need to be frozen or refrigerated? Looking for time savers. Ty
