I always love the way FromSoft's levels play around their gameplay. I love having the gates to progression being actual bosses. It never feels as though they've thrown a random puzzle in or thrown a random "hey go get this item from here to progress this". It plays around the main feature that that the player will be using for 99.9% of the game and that is genuinely fun and engaging combat.
I think it just proves an obstacle doesn't need 50 different ways to overcome, it just needs 1 (variations can exist e.g magic / melee etc, but it falls under combat/build) and that 1 needs to be actually fun for the player. Im only still a student, but as level designers we have the challenge of playing around what the games mechanics are 😅 but when the 2 designs work together well it feels amazing.
Don't forget about Bethesda and Rockstar, not sure if there's anyone bigger when it comes to open world franchises :)
